Is it possible to make a single brush in the shape of a cube with a corner taken off for example? If you use the carve tool it cuts it into two peices and if you use the clip tool it screw it up really badly.

Yes, though it involves the clipping tool.
By clicking on the tool in the toolbar it changes the clip mode, from alternating which side to hack off to just splitting the brush. Keep that in mind and I'm sure you can find a way to make it work.

Sorry, I wasn't very clear. What I meant was not a corner sliced of in one stroke, I meant like a square chunk. For a better example, is it possible to make a cross out of one brush?

It is. In a way. You must be very practised with the vertex tool, otherwise you'll get coplanar faces and invalid solid structures. Why do you actually want this? It wont give you any advantages compared to making it out of multiple brushes.
