I've found some props in L4D that I would like to port over to my CS:S map. However, the L4D file structure seems to be completely different than the rest of the Source-engine games. I have no idea where to extract the model + materials I need.

Not locked. They're just not using the .gcf file system anymore.
The new .ncf files actually just refer to other files elsewhere. You're looking for

pak01_dir.vpk

which can be found here:

Steam\steamapps\common\left 4 dead\left4dead

The latest version of GCFscape supports the new format.
