one would presume sowell, the headcrabs take the needed nutrients and stuff into its own body (because the bloodstreams are connected), so the headcrab undoubtly does the excreting too

Not a mutatation it was created by the combines.it IS a mutation. There are 3 different headcrab types. Normal, fast and poison.
The reason you dont see bigger headcrabs is becose they dies after a time whitout an bigger bodyor maybe, VALVe coulndt be arsed making a bigger headcrab..

Headcrabs arent from this world so it works diffrent here. They arent suposed to have humans as its host so i strongly belive that they cant deliver everything that the human body needs to survive. Sure the more the zombie eats the longer the host survives but evantualy the body collapses and the headcrab needs to find another hostwhy would the human body collapse? You have forgotten that creatures can adapt to new environments and ,in this case, hosts. Why wouldnt the headcrab's find humans good hosts? They're weaker then other hosts on Xen and are capable of raking in alot more food then others. So the host, in my opinion, wouldnt just collapse after awhile

That doesnt really make any sense to me. They would grow from a possible superior amount of food because they already are fully grown.
