Hi i'm about to release a new map in beta for CSS, and i want to be sure all the models, textures, sky, etc are all included in the bsp. How exactly do i go about this for source?

i'll be porting it to HL2DM too, and same, i want all the same stuff included to bsp, but for half-life of course. Also, i'm wondering of anything that may not work properly from my CSS map in HL2DM clients that i should look out for.

Look into bspzip/pakrat for embedding content in a .bsp file.
I'm not entirely familiar with the entities used in Counter-Strike Source and Half-Life 2 Deathmatch, but I wouldn't be surprised if some entities work slightly differently.
