I've seen some absolutely increbible trees around, which I'm certain are brush work. I think I read somewhere that they are Day Of Defeat trees, are there any prefabs of them I can get somewhere?

Depends on what game you are mapping for. DOD and CS have great model trees already in the gfc.

The Trees from Posion Garden are ripped from Day of Defeat. DoD has many plant models available, but if you need more, search the net. You'll turn something up.
