What exactly is the advantage of making everything in a map brush by brush instead of hollowing?

Hollowing places brushes in an odd arrangement, which can be difficult if you need to make a cube with all but one side, etc. Brush by Brush ensures precision brush placement. In fact, it's always advisable to keep brushes snapped to grid at some level around 8, as Anon. mentioned, or 4. This way you can avoid small 1-unit gaps that will cause pesky leaks to show up.

Placing brush by brush makes it easier to edit things as hollowing can make the brush go between grids and generally fuck up, you have more freedom to change things with brush by brush mapping.
It takes longer, but in the long term it helps alot, and can save you hours of pointless frustration.

Use carve instead, if you're having laziness issues, you can control the brushes a lot more precisely, and just selecting ig (ignore groups) you can edit individual brushes easily.

hollowing is for small detail objects imho.
