It's simply the printer knowing how much ink that it has printed since you first put the cartridge into it. The cartridge has a fixed volume so the firmware can easily predict the amount of ink left (assuming you don't refill it). If it automatically detects when you put a brand new one in, it's probably because the chip inside the cartridge has a different serial number or some such.

And finally, i know this printer cartridge is a piece of shit, because it's a printer cartridge and it has this logo on it.

Ink detection could probably also be done by a conductivity test.
