Slow down!
The chicken is a monster_generic, if thats what you want, with the location of the model specified in the path field.
There are such programs, google Half-Life Model Editor.
And yes you can change the hostage model, specify the filename and path in the model/body field.

about making models... where can i find step, by step tutorial how to make models using Milkshape? I downloaded it but can do almost nothing with it : If there is a tutorial (best if easy and clear

On Milkshape's site there are some... a whole lot of them actually... of wich some are quite usefull too. Just take a search. It doesn't hurt.

well, i prefer "user tutorial", becouse it's often more clear to understand. And i've searched a little, and learned... also a little

Look on the post that mapper_man made about Model Skinning. There was a full tutorial on Milkshape if im not mistaken.
