How can I get wedge, arch, etc. brushes to rotate so that they orient themselves the proper way?

i.e. I'm making a ramp to go onto an elevated platform, but the wedge tool simply makes a triangle shape for the top down view, I need the wedge to work from the side view.

There are a couple of ways to do this:
You can use the transform tool,
You can use Vertex Manipulation to make the brush go where you want it, or you can select the item and left click again on it until the corners of the item turn into little circles, you can re-orientate it by using these circles.

I recommend using Vertex Manipulation over the other methods.

Transform is handy if you want to rotate it 90* or something.

When in this rotating mode (with those small circles at the corners of the selection), pressing Shift while rotating will rotate in steps of 30 degrees. I use this nearly always as rotating amount other than in steps of 90 degrees can end you up with vertexes not aligned to the grid, wich can cause problems during the compile process when it's about complex shapes. For rotations other than in steps of 90 degrees, I use vertex manipulation too like Andy already mentioned.

Captain P, can you set that rotating modifier to something other than 30 degrees? I prefer 45 degree angles, but use the Transform function for that.

Excuse me, the steps are 15 degrees. I just checked it out. You can't specify another angle though but 15 should be good for you in this case.

Yes, that's the option to make this rotating in steps standard, so rotating with Shift pressed rotates freely. When that flag is unchecked, you need to press Shift in order to rotate in steps of 15 degrees...
