the idea behind a door is that it moves the exact number of units its worth. i.e a door 30 units wide set to move sideways will move 30 units. this can be adjusted by adding/subtracting lip (check the glossary on this one?)

Right, but it takes more work to make the lip value perfect to make the lift look proper on a lift door than just making a func_train and setting up path corners and doing it that way.

You can also use func_plats. I prefer func_doors for simple lifts and func_train for more complex ones. I think that finding out the correct lip value is not a real problem. It definitively doesn't take longer than setting up the path for the train.
