How would one go about so that a player "slides" as if on ice? I know it would be an entity tied to a brush but not sure exactly which antity and settings.

The entity you need is a func_friction.
Its pretty good with the default settings but just play around with the settings until you get the effect you want.
Oh and its not solid so make sure you have a floor underneath it.
